Italian Sausage Recipe

My BIL and a few other fellas on our deer lease make deer sausage every year at the house. We usually make 300-500 lbs. We stick to green onion, garlic, jalapeno sausage.

I want to venture out this year and try something new.

This year I want to make Italian sausage, pork only. Does any one have a receipe for a large batch between 50-100 lbs.?
