Why all the commercial celebrity voice overs when the celebrity isn't revealed?

They never reveal the celebrity and most people never even notice.

Currently there are voice overs by:

John Hamm
Matt Damon
Michael C. Hall
Martin Sheen
John Krasinski

I'm probably missing some. These are the ones I've picked up on.

I don't get it.

Everyone knows Jim Halpert does those insurance commercials. That's why they get a celebrity. Why would they need to reveal him?

I saw a celebrity (can't remember which one) talking about this on Late Night. They don't show them because it is a completely different pay structure. For the voice over, the actor shows up-steps in a sound booth and bust out the script in a couple of hours. They pay $30k-50k for top tier guys. To get them on camera, with all the related BS, takes days and they pay 100's of thousands for that. Actors view it as easy pocket cash and the companies get the benefit of hoping you associate the voice with the actor with their product.

It provides a sense of familiarity which makes you have a more favorable impression of their product / service

I get B listers picking up a check, but Hamm and Damon?

You never even know it's them unless you just have an ear for that sort of thing.

Kinda sucks for the professional voiceover artists who do this for a living, getting squeezed out by a celebrity.

For everything else, there's Mastercard. Billy Crudup. Was getting $15,000 a pop back in '02. Probably more now.
