Havalon Piranta or Havalon Baracuta...uses replaceable scalpel sharp blades that you change when they get dull (4-5 deer for me). Blades cost like $8 for 12.

i have one very similar. i use the guthook on it but always seem to go back to my Puma game warden for skinning

I always liked a short blade on a skinning knife.

The problems I'd have w/ a knife like are 2:
1. W/ a blade that broad, it's tough free up the anus if I'm going to completely gut the deer.
2. I don't like the handle to be so thin.

I also like rather short blades, usually 3-3 1/2". I'm not excited about gut hooks, but my son really likes his gut hook knife.

Dont' know whether you're looking for a fixed blade or a folder, but I find myself turning to a fixed blade more and more. Here are two of my favorite fixed blades for skinning a deer.
Cold Steel "Roach Belly." Really like the knife, but hate the name. Can be found all around the 'net for bout $15.


Kissing Crane "Classic Hunter." Cost 'bout $45.

As far as folders, it's hard to beat the classic "Buck Hunter."
