Fried Turkey Question

I got a new fryer. It is a Grillsmith, pot and burner. Directions say to fry turkeys at 325 and that if grease temp goes over 350 the burner will shut off.
I've always cooked my turkeys at 360-375. Any ideas why directions call for such a low temp?

I fry mine at 350 all the time. not sure how you can bypass this limit switch but, it might have to be done.

Because anything over 350 is too damn hot.
