Just got the pit lit and about to throw on the bird. Hoping for about an 11 am finish

I buy turkey breasts, debone them, season them inside and out, tie them up in a roast.
I cook them on the pit, indirect method, until they reach 160 degrees, usually about an hour and a half.
I'll put them on around 10 and will serve after resting at noon.
I'll take the carcasses, add some chicken wings and necks, and make a big stock tomorrow to make gumbo with this winter.
All that doesn't explain why the hell I got up so early this morning.

Been up since 4, got the turkey on and the smoke is rolling good. Just polished off the 2nd cup of coffee, about to go drop a duece.. life is good.

Got a cup of french roast, bird is on the egg, fire burning hot inside and got disney's a christmas carol on the tv. AND mama dgd made monkey bread. Helllooooooo diabeetus
