Never done it before but cooked bacon this morning and am about to start a roast. Thinking of either browning the roast in it or cooking down my onions bell pepper etc in it. Any suggestions?

Brown the roast then add some liquid and scrape around so it all mixes and makes gravy.
(With a starch)

Add some flour to it and make a roux/gravy. Then just throw your veggies in that.

If you make a gravy with it, be careful about adding any salt to the gravy, as it should be salty enough.
