Frying a turkey for work next Wednesday

I haven't fried one in 8 years. Any advice would be helpful.

My biggest question right now is should I start brining it today and let it defrost in the solution? or should I let it thaw out over the weekend and brine it monday or tuesday?

I didn't think you really needed to brine fried turkey but I probably wouldn't brine it for more than a day

The most important thing you need to do is determine the amount of oil you put in the fryer by making a mock run with water and dropping the turkey.

Do NOT try this putting the turkey in for the first time with hot grease.

I love frying a turkey but also get nervous during my initial drop because of videos like that.

And the fact that I fry them inside near cans of gasoline.

I have never brined them. I just injected them and fry away.

Let it thaw first. Then brine the night before. I do equal parts salt/sugar and add in some seasoning I will use the next day.

God I love watching gifs and videos of morons frying turkeys. It's always epic watching mobile homes burn down.

Disclaimer: I'm not saying that all people that fry turkeys live in mobile homes. But there does seem to be a correlation between people that have the process go up in smoke, so to speak, and residing in a mobile home.

I have never brined a fried turkey. I inject it with a homemade concoction, but never brined it.

looks like i wont be brining the turkey then. and i'll be sure to test the turkey first with the water. thanks for the advice!

Just something I have done over the years is I have marked inside my pot lines that correspond to weights of the turkeys. I have a line from 10 up to 15 lb turkeys inside of my pot. Nothing fancy, just etched a line with a screwdriver/nail or anything handy on the inside of the pot.

It hasnt "not" worked for me. Had the same group of people had my turkey before and thought the brined one was much better than not. Both were injected
