Fresh Pumpkin for pie - anyone ever try freezing for future use?

I have been making pumpkin pies for years using fresh pumpkin and the difference is incredable when compared to canned pumpkin IMO. Only drawback is availability of the pie pumpkins late in the season. Anyone have experience preparing the pumpkin and freezing for future use? I typically quarter the pumpkin and remove seeds then boil for a few minutes and remove the meat from skin. Looks like it would be easy enough to vacuum seal and use later.

Use a serrated knife like a large bread knife. Cut it in half then quarter. Remove seeds and some of the guts but leave meat and skin on. Boil for about 5 min or so ( check with fork) - drain and let cool then just seperate meat from skin with spoon. Very simple and safe. I tried a lot of other ways so I feel your pain!

Will try. Sounds a lot less violent than my first few attempts. I'm lucky to still have all my fingers!

ill do this as well. Trying to duplicate my grandmas infamous pumpkin pie and its not quite right. I'm going to use fresh pumpkin to see it that helps. Cant hurt, that's for sure.

I get the small orange pumpkins - about the size of a grapefruit or so. They typically say pie pumpkins on them although I am convinced this is just to charge you a bit more..

After carving larger ones with the kids over the year, I dont see a whole lot of difference overall but have not tried the large ones.
