Dirty Rice Recipe - Cast Iron Pot

I'm looking for a dirty rice recipe to be made in a cast iron pot for tailgating tomorrow. My chef bailed on me and I'm looking for some help to get the dirty rice made.

I go to the box for this one. It's quite a bit of labor for a side dish. If you are a purist, This one is about as close to how I have seen it made from scratch. There are green onions (tops and bottoms) in the home variety as well.

Please don't flame, but I also use the box, except I add onions, jalapeno, green onions, celery, etc. I also use chicken stock instead of water, and use ground Italian sausage or venison sausage instead of beef. Its one of the only things I make that's not from scratch. I cheat a little, but it comes out really good.

I use the frozen plastic container, there's a couple of different brands and follow directions although I will add some additional seasoning and meat. Comes out pretty good every time.

Yes, get a few boxes and doctor them up a little. I like peppers (jalapenos, bell peppers), onions, celery, and a few tbsp of roux to thicken it and give it more depth, richness and color.

Dirty rice =/= Rice dressing. The box is only for yankees and severe emergencies and the proper name is dressing, I don't care what Zatarains says!

Not to be a Debbie Downer but with the forecast and lack of experience, the box may be your best bet.

Guess so????

I add cooked diced eggplant to the livers and gizzards and them put in in the food processor.

I find it keeps it moist - especially for leftovers.

I can't stand some dry "dirty rice."

I like rice dressing.

My apologizes for the wrong wording didn't realize I was on the Rant. Unless New Orleans relocated to the North it was called Dirty Rice there. We only ate rice dressing on Thanksgiving. Thanks to those that responded.

This. I'm 35 and I've never heard dirty rice called rice dressing.
