Copenhagen Reviews (New Nordic Cuisine)

Not sure how many people this will help, but here goes.
Royal Cafe- very good open faced sandwiches in a very nice courtyrad. Its on the main drag but still frequented by locals.
Relais- the most disappointing michelin starred restaurant I have ever been to. Let me preface this by saying the my wife loved it and the wine pairing was awesome...extremely unique global pairings. This place was more about show than anything else....the menu is a set 6 courses (no deviation)....the high was very high and the low was very low....basically an asparugus covered in pistachios...that was it. To me, it typified all that is wrong with New Nordic cuisine
Famo- Off the beat and bath...way out of city centre....a tuscan style tasting menu. Excellent....a rabbit rug ragu over housemade taglietelle was the high point. Very detailed italian wines by region.
Geist- the best meal we had in 10 days in Denmark...we made our own tasting menu....the meal went on for 4 hours. We requested the sommelier pair us with a glass of wine that best paired with small plate we ordered....superb caviar to raw norwegian lobster with cranberry powder started strong, but the calamari with grilled green onions was incredible....the high point was the weirdest of all combinations....rare sous vide filet mignon with pureed beets....fricking excellent....the dessert was a wasabi chocalate combo that was incredible...this meal (like Relais (was about $500)....this one was well worth it. It is new but a michelin star appears inevitable (hopefully relais loses theirs too). This meal embodied the new Nordic that I was promised heading into this trip.
If anyone heads to Northern Denmark....I can help as well. I was there on business which paid for our trip....my client did nothing but show us the most ridiculously great time and restaurants in Northern Denmark.

the whole trip was awesome....skagen is beyond beautiful....the waves from the baltic sea and the north sea crash here...one in one direction and one in the other (and you can watch this from a nazi bunker left there from wwii)....then a dinner at this beautiful restaurant/B&B....then we watched the sunset on the atlantic ocean on a beautiful beach....at 11pm!
Denmark is certainly no Italy or France, but the people are exceedingly nice and the country is very pretty. Though Copenhagen is a great European city, there is definitely more to Denmark.
