Smoking potatoes on the smoker, anyone ever do it?

The smoker will be broken out this weekend & I was going to make a potato salad to go along with the meats. A while back I saw on the food network where someone had made "smoked" potato salad-didn't see the process or smoke times but the end result looked, & according to those tasting it, tasted great. I was wondering if anyone tried it, what the process was, & if its worth it? How long, foil or no foil, holes in potato or not? TIA

Had a BBQ place off Williams that smoked them. Not sure if they par boil or not, but they had a nice flavor.

Never done it, but I would imagine you would want to parboil or partially bake them first. They probably absorb a ton of smoke fast, and would become bitter. I would not use foil, that would defeat the purpose of getting the smokey flavor.

Always wrap them in foil and just put the on the end furthest from the fire. When you are close to beng ready to eat, take them out, cut open and put butter or whatever else you want in them. Sweet potatoes are good like that also.

I parboiled some once, then smoked them for a while. Made Smoked Potato salad, with bacon, mayo, scallioins. It was a nice departure from the normal.

Pops did this when I ws younger... liked em, great taste..put em on the rack below the meat and let the juices drip all over em... peeled and halved ...

I was thinking the same thing. To answer the OP I would bake then slice or cube and put into the smoker in a pan for a little bit to get some smoke flavor.
