new to salmon

so ive just started ordering salmon at restaurants and the range of goodness varies drastically. i know there are several different species, is there something i could ask the server that would indicate the goodness of salmon served. what should i be looking for. let me add, that i'm referring to good restaurants w/ servers that know what theyre doing. i would not ask a server at the chimes what type of salmon they're serving.

ETA: Oh...a joke????

I prefer Pacific Northwest Salmon over Atlantic salmon. The flavor of PNW salmon is stronger and mo better IMO.

You misspelled phags.

Ask if the salmon's wild. Wild is much better tasting (and more expensive) than farm raised. Don't pay a lot of money for farm raised salmon.

Some good varieties are Wild Alaskan King or Wild Alaskan Sockeye. There's also Copper River and Coho.. both Alaskan.

If asked how you want it cooked, ask for med rare. If salmon is overcooked, it tastes and looks like cat food. Not good.
