Southern Belle's Crawfish Balls ...

Anyone ever had them when Southern Belle was still in business?

A dear friend of my wife and I was talking about them ... she said her family would get a big tray of them from Southern Belle catering ...

She knows i can cook, and that i'm pretty good at recreating something after having it just once. She's asked me to try to make some ...

Problem is, i've never had the damn things, and they're out of business.

Have any of you guys ever had them? If so, can you describe them? What was in them, what was the consistency, texture, taste, size, coating, etc.

TIA for any help, guys. This lady is a dear friend and i'd love to be able to create a reasonable facsimile.

Thanks ... if he doesn't want to share a recipe, that's fine. Quite understandable.

Hopefully he or someone he can turn me on to can make and sell me some.

I missed that Ricky started up a new venture. Their sandwiches were like crack. Get to drinking at a reception or tailgate and realize I ate the equivalent of 5-6 whole sandwiches one little triangle at a time.

We'd get a platter of SB sandwiches at work every now & then, they were delicious and obviously we didn't realize the shitty conditions they had been made in. Don't know for sure, but I'd guess the SB owner made large $$$ during Katrina.

Doubt I'd ever be interested in eating any food that the former SB people are a part of.
