I'm going to grill some redfish on the half shell this evening and looking for a good cream sauce topping for them. Any help is greatly appreciated.

What about a remoulade? I always love that with reds.

heavy cream
reduce by 1/3
add tony's, or your favorite blend to taste
add a bit of fresh grated parm
pour over fish
top with diced green onion and perhaps some crumbled bacon
enjoy

Sounds good. Reckon I should use this with the fish on the half shell or do fillets?

Half a cup white wine and one shallot or finely minced onion, bring to boil and reduce about by half, Whisk in a stick of butter cut into pieces a piece at a time, add a few capers, chopped green onions and chopped parsley, whisk in quarter cup of heavy cream and the juice of a lemon. Spoon over grilled half shell redfish.

I also like redfish on the half shell on the green egg and I brush, just at the end a light coat of BBQ sauce and just let it set. Little different but I enjoy it.
