sweet potato chips - How do you make them?

I've tried a few times, and mine always end up soggier on the inside and not crisp. I've followed multiple recipes with limited success.

What do you do?

You could use a mandolin and shave them really really thin, but I rarely do that because the mandolin freaks me out.

What I do is try to slice them, mix them with salt, herbs, and olive oil, then bake them at 450 for five minutes and then turn off the oven until they are dried out and crispy.

I've learned that unless you really scorch them in the oven, a little char on the sweet potato chip tastes good in a roasted marshmallow kind of way.

Use a mandolin and slice them thin. Fry at 350-375 in small batches so you don't kill your temp. Unless you have a badass fryer. Use peanut oil if you aren't allergic.
