Go to a real brewery.....Funkwerks...even Odells.....best bar is Mayor of Oldtown.

The CO Brewer's fest is today, I recommend you hit that up. Choice City Butcher and Deli is a great spot downtown.

Choice City is very good but there can be a substantial wait at peak times. Oddells is incredible as well.

If you don't have a car, rent one and go to Rocky Mountain National Park. If you are getting into the Mtns each day and need suggestions of what to do after then Choice Titty, Mayor of Oldtown, Tap n Handle, Funkwerks, Odells, Black Bottle, Equinox, and you've already hit New Belgium.
You can rent a bike and ride to all those places. I love Ft Collins and the weather is gonna be great this weekend.
If you aren't getting into the Mtns then you are doing yourself a disservice.
Eta- Whitewater rafting season is in full swing right now and with all the late snow all the rivers are full.

Thx for the recs...
We've got a friend with a huge place in Estes Park, heading there tomorrow and staying the night...will try to check out a few of those places...
Back to Denver on Monday (getting dropped off by friends)...Fort Collins has been awesome thus far...
