Steak Myths

Saw this article earlier and thought it was worth sharing. Myths 1-4 I have all seen used religiously.

2 is def an opinion.
3 isn't scientific at all but the myth itself isn't correct.
4 is just a correction on a misguided technique
5 I'm not sure where it came from, I've never heard of waiting til after the steak is cooked to season
6 I've never heard
7 I've heard people complain about
8 I've def seen people use the "poke test" to try and tell if a steak is done while comparing it to their hand

Correct. There's a good reason to sear a steak, even if it's not technically "locking in the juices."

The thing with 1 is that it doesn't hurt the steak in anyway, it just doesn't help it cook more even like most believe.
You could easily run your own tests next time you cook steaks, take 1 out and leave 1 in the fridge and monitor the internal temps

I've found that letting the meat come to room temperature, makes it easier to ensure that the meat is dry (which is important in getting a good sear).
The cold meat tends to sweat a lot more, making it harder to ensure it's dry when you put in on the grill or on the skillet, even if you try to dry it with a paper towel immediately before putting it on.
