I have an electric element smoker with no temp adjustment... just plug it in and its on.
Just doesn't seem hot enough to me...
I'm going to put a thermometer in it right now.

Depends on what you are cooking.

225 - 275ish depending on what you're cooking.

I laid my meat thermometer on my ribs for a few mins, and it shows about 175 deg...
stuck it in the meat, showed about 140.
175 is too low, huh?

I think it's too low for smoking meat.
There are things you can smoke at that temp or lower.
Gonna take a while to get em done at that temp.

You need to hit 212 at least for the Maillard Reaction (browning) to occur. At 175 that could takes days. 175 will cook, given enough time, but things might look a little different than usual.
