Good mushroom recipe?

How do I sautée mushrooms? Every time I do it, I feel like I need to add a ton of butter and/or liquid to cook them down, but then they end up soggy. Any suggestions?

Just enough butter to coat the bottom of the pan, then cook them until they have sweated all of thier moisture out of the pan.

I just threw some in the broiler. Capers, garlic, veg oil, s&p, and chopped butter. Gonna hit em with lemon juice when I pull them out.

you can just do it with cooking spray if you want. tonight i sauteed mushrooms, zucchini, bell pepper, onion and tomato and served over rice with chicken, peas and applesauce.

If you would like more "crunchy" mushrooms, you could try baking them in the oven on a cookie sheet
