Because you can! Assuming voltages are in check, of course. My 4770K is running at 4.7GHz 24/7 at 1.34v. I assume your chip can do better than that.
Why do you need to find a good setting for the cards? It will vary from card to card. In fact, one of your cards will not overclock as well as the other I'm sure.
Start by bumping memory by +25 and running a benchmark each time (Hint: go ahead and bump your memory by +300 and start from there in +25 increments)
With core, move your voltage slider to the right and see what the core boosts to.
You will absolutely need to use afterburner OSD or GPU-Z to monitor your clock speed during benching. These cards don't operate the same way you're used to. They boost based on need and power availability. To know your stable clocks, you have to know what speed they're running during benchmarks and gaming.
Start by downloading GPU-Z and checking the ASIC scores of each card:

Sounds like mine. 70.1 and 79.5. One overclocks 50MHz higher than the other.

core voltage goes to +37, that's one thing I don't like about afterburner it doesn't give your the values, just the + and -
Do your recommend furmark for the testing or just use firestrike?

It annoys me too, but it's not afterburner. It's the card/drivers. I've used afterburner for many cards, and AMD cards before Hawaii displayed exact values. I do miss that a lot, especially since these Maxwells are so fricking weird about the way they boost. It's best to just move the voltage and power sliders to the right and then just bump up clocks in small increments as you go, monitoring the core clocks in real-time as you bench to see what they're running at, whether they're throttling, etc.

Furmark only tests OpenGL on the GPU (very little mem testing) and is really meant to test temperature tolerance and power consumption, not stability. Firestrike is a good stress test. But once you're toward the top of your OC window, you might find that some games may even crash whereas Firestrike won't. Find highest stable OCs with firestrike. Then, if you ever crash in a game, bump the core down by 10.

BTW, if you crash from an unstable overclock, be sure to reboot before you bench again.

Hmmmm....I keep raising the core and memory clocks but my scores are actually worse than when I used a lower setting, no crashes running 3DMark 64 bit and firestrike extreme.

Bring memory back to stock and up the core. Make sure core isn't throttling due to TDP limits.

Take a look at voltage too. I know there was a bug in SLI maxwells where one card's voltage was running lower than the other. The solution was to set each card's clock separately and make the lower-volting card 30Mhz lower than the higher-volting card. I still have to do that in most games.
Speaking of crashing. I was running Far Cry 4 at 4K, and I just froze/crash. First game to tell me my OCs aren't quite stable. And I guess only at 4K.

I think I found my sweet spot (both cards the same), I am about to bench and I will post with lots of pics and settings in a bit.
Side note the GPU and cooler are very quiet through all this, the tower is head height and less than two feet from my head and you can hear them but it's not even distracting.

Not sure what you're saying.
Also, don't just copy my voltage and multiplier. I also changed input, digital, and analog voltages, and tweaked current/power settings. Not necessary for you to do, but find the lowest safe voltage.
After that, gotta work on uncore.
