The actor that will make you stop flipping the channels, regardless of the movie.
Has to be Jack Lemmon for me. My favorite actor of all time, regardless of the movie, if he's in it I usually stop and watch it. Even that old crappy Out to Sea movie. Walter Matthau is up there two- because they starred in so many together.
Lemmon was just a fine, quality actor. One of the all time best IMO.

Rip Torn. The guy is totally underrated, and totally immersed in his roles: "Cross Creek", "Heartland, "Larry Sanders", etc.

Probably Tom Hanks because I like most movies he is in.
Bruce Willis, just long enough to know if it is Armageddon.

Great choice. (ETA: I just watched Save the Tiger for the first time a couple of years ago - he was just an amazing actor.)
Spencer Tracy, Kevin Spacey, Philip Seymour Hoffman and Denzel Washington are others in this same category for me.
