In cold water they're as good as spotted cats. I picked up a hoop net Saturday that had 39. You bet ur azz I kept them. Cleaned/fillets some, gave most away. They're not greasy. When you skin 'em they look ugly as shite. A lot of red. Let them soak in water in fridge. They'll be white as spots.
I kept some smaller ones to freeze for crab bait but there were some 2-3 lbers in there.

I've been told that in the summer/warm water they aren't good.
I give most of the fish I catch away and I fish the river so I usually have some flat heads in the freezer but once and a while I'll clean some to cook fresh.
