Lamb Chops

Throwing a couple on the grill later tonight. How should they be seasoned and how should they be cooked? Like a steak?

I like to herb crust with salt/pepper added.

I cook to medium where I usually have a steak med rare/rare.

I don't know if I have everything to do the herb crust. Do you have a recipe?

I don't really go by a recipe, usually pick through the herb garden and grab what I need.

Parsley, Basil, Oregano, thyme, rosemary, mint (just a little). Use red pepper flakes and coarse salt and pepper. Put them in a food processor with olive oil (doesn't need to be virgin) and garlic.

You can add a little balsamic vinegar or lemon juice as well.

The mixture should be a paste like consistency. Just coat the outside and usually I go for a medium/medium high fire.

Olive oil, lemon juice, oregano, salt, pepper. Keep it simple.
