Freeze half of it. It works pretty good if wrapped right.

I never buy more than a quarter pound, enough to make maybe 3 sandwiches.
I go to the store at least twice a week, no reason to buy a lot.

A week max. That's when the nasty fat slime starts appearing.
If I buy a half lb I go through it in two days, if I buy a lb I end up wasting most of it. Life is shite.

About a week and half is as long as I'll go, and I'm generally a guy who laughs at expiration dates. After the week and a half it gets that weird slime on it, and while it doesn't smell bad, it doesn't smell good either.
Now if we're talking about the sliced cheese that goes with deli meat, hell, that keeps for a good while, despite what the package says about 7 days.

If you want it to last longer have them slice it thicker. The thinner the slice the quicker it will go bad.

I buy it 5lbs at a time, then separate and vacuum seal it in 1/2 lb bags and freeze. Take out the small packs when needed.
