A friend shot me this link and said it worked fantastic. He said after 21 days the USDA Choice Ribeye he aged was every bit as good as USDA Prime. I somehow doubt this, but its an interesting concept as opposed to open drying and guaze wrapping your beef...

I age meat regularly in my extra fridge. I don't use towels, cheese cloth, or other wrappings. I use a wire rack and a drip pan that I clean when required. These products may be awesome, but I'm not sure that they're needed. When I see dry aged beef in the stores,it isn't wrapped in anything....same as when I've fewed the aging beef on television shows.

I can see that, my friend says what he likes is that by using the bag he could age the beef in his regular household refrigerator since he doesnt have an extra fridge. Just throw it in and walk away he said..

My thoughts is that is a lot of time and space to take up in the fridge, vs just paying more for prime to begin with or be happy with choice. Now if it was better than prime it might be worth it for me...

I do love dry aged beef, but admit I have a hard time sacrificing the space in the fridge, investing in the bags and doing all the trimming to remove the outer crust once the aging has completed. We're paying about $6-7/lb for Choice and $13-15/lb for Prime locally. I guess if you had space and he's right that Choice compares to Prime it may be worth it? I may see if I can steal a steak or two from his project and see if they are really worth the effort.
