Whole Speckle Belly recipe suggestions

Got thee whole specks I cleaned and I'm looking for some suggestions for a good way to cook them for several people who aren't adapted to wild game. Probably gonna do a low and slow cook in a big crock pot, just trying to see what any of yall have tried and been successful with. TIA

IMO putting a goose in a gumbo is the worst thing you can do. You want to start with browning some sausage and onions and peppers in a pot with the goose (halved). Remove sausage and slow roast goose in some mushroom gravy on like 200-250 for like 2 hours checking periodically to flip and maybe add water. After removing from oven put sausage back in pot and cook for another 10-15 minutes. Serve over rice with a side of garlic bread and veggie side of choice

This is my favorite way. When you're prepping them soften up a ton of butter and give them a good massage then soak them in some butter milk

We injected and deep fried speckled bellies like a turkey once and it was incredible.
