Thin slices seasoned well. Batter in flour. Fry hot and quick Eta: I prefer blackstrap on the grill, like a steak.

I use buttermilk and then dredge in seasoned flour. Works great. The other option is an egg/milk mix. Maybe 2 ggs per cup of milk for that. You can season the wet item if you wish, but as said above, I just season the flour.

salt, pepper, garlic, flour, hot grease, don't over cook... batter schmatter....
