One of our regulars at the bar brought over a roaster full of stuffed acorn squash to complement our turkey day fare. It was freakin incredible! The sweet of the squash perfectly complemented the savory of the ground meat stuffing. I'm definitely going to experiment with this dish.

My wife makes stuffed acorn squash a few times a year that is awesome. Her's uses barley, ground turkey, herbs for stuffing and then topped with goat cheese and baked.

The stuffing was ground beef stuffing. I'll ask him for the specifics.
