Wild Hog Questions- Storage and Recipes

How long can you keep hogs in an ice chest and they are still ok? Also what are some of your favorite ways to process and cook them? Any favorite recipes? I want to do some sausage but I am also going to smoke some of the hams.

I keep them quartered in ice water with a couple cups of vinegar for a few days just draining the water off every day till it's pretty much clear. I then wrap it in plastic wrap a few times so there's no air touching it then freezer paper. About the longest I've been able to hold off eating it all is about six months and it's still great then. I suspect it would be good a lot longer.

Depends on the conditions outside and the quality of the ice chest. If they are small enough you can cook them on the grill whole and they are delicious. Also I like to use them to add to my venison when I get it processed. I like 70-30

At this time of the year, imo, the more important question would be how long did it take you to get it there from the time you shot it?
