Creatures to harvest in Destin FL

Heading to the beach this weekend with family. I'm not really a beach bum, so I plan to harvest while they lounge.

What should I fish for, just using primitive methods?

Thinking about making a Hawaiian sling and snorkeling around.
Also, I read that there are scallops in the area.

Who do yall think I should target?

A buddy caught an octopus for his aquarium at the destin rocks while SCUBA diving. Just be careful with the current

I think that's more towards Tampa. I snorkled off the beach in Destin a few weeks ago. Found plenty of Sand dollars(4-5 inches across)a few Stars and some nice shells when I got to about 15-30 feet of water. Also caught a Seahorse in some Sargasso. The fish were scarce except for a small flounder, a small tarpon and a few jacks (unsure of the type).

I just got through reading about harvesting scallops in that area. Pretty interesting. Have you ever done it? Is it too late in the season?
