The right bread is crucial. Just do them New Orleans bbq shrimp style and add lettuce and tomato. Lightly douse the po boy with with left over juices from the bbq shrimp.
If you don't want to do bbq shrimp, then I'd suggest grilling them and doing a shrimp remoulade style.

Season shrimp with salt, pepper, chili powder, paprika and basil.
put the shrimp and some chopped up peppers and onions on a large pan on the bottom rack of your grill, place 6-8 strips of bacon on the top rack above the pan.
Allow the bacon to drip onto the pan that the shrimp and veggies are on.
Grill / fry shrimp up in the bacon drippings.
Place on fresh po-boy bread with melted swiss cheese.
Enjoy.

First page, first post would work well with grilled shrimp. I've made this for a lot of people since and everyone has enjoyed it. You don't have to have that hot sauce to make it. Use whatever you like, but it's a great poboy.
