re: How long does gumbo stay good before refrigerating?

I don't know what would have been worse, moving out or staying in. Both result in choking.

Honestly, I didn't do that much to the kitchen. You'd think I gutted the place with how long it took. Just changed out the floor tiles to ceramic, same colors, repainted everything, put a new backsplash up with a new stovetop, bigger stronger hood, redid all the AC duct work and added another AC vent. I have a big island (no cooktop on that) with a lot of drawers and there are 6 doors in/off my kitchen. Maybe that's what took so long. Oh, and I changed out the countertops, but not granite. I liked what I had and it fit in my kitchen better than any stone I saw, so I stuck with it. It held up except in one spot where the gumbo pot browned an area on the backsplash, so I changed that to ceramic tiles. That's it. Shouldn't have taken an Act of Congress, but it did.

When I make seafood or shrimp gumbo, it's all going to be eaten at that time. I don't like it as a leftover with the seafood in it because it's overcooked. If I make a big pot, I only add seafood to the amount I need for the meal I'm serving. I freeze the rest sans the seafood and I agree with being more careful with a seafood based soup or gumbo.
