Recipe for Beef Tongue..Got any

I have eaten it a few times,but have never tried to prepare or cook it,A Spanish guy at work gave me tongue served on a tortilla with tomatoes, lettuce etc. ...It was fantastic. Any Hints?

season the tongue and stuff with a lot of garlic. cook a pot of rice. sear the tongue slow and long. take it out of the pot whenever it is browned thoroughly. add chopped onions and bellpeppers to the pot and sautee them until translucent. add the tongue back into the pot along with a little water. close lid of pot and let it simmer until the gravy is thick.
this makes the best gravy out of all meats available.

These posts have sparked my interest. I will try anything, but always been afraid of the tongue (leave jokes on the OT). I might have to pick one up and experiment. Keep ideas coming, and i'll post any of my findings as well

this. however, if you get it at meat market/slaughter house, they usually skin it for you.
you outta try pork tongue. it's 2x as good as beef and less expensive.

I first ate some tongue a couple of weeks ago on some tacos at Taquiera Carona. fricking delicious, tastes a lot like a really good pot roast IMO

I'd vote for the beef short ribs making the best gravy but tongue runs a close race.
Braised just like short ribs. It's as good as a filet when cooked right.

Season, sear on a skillet, chop up a mirepoix, throw all into crock pot on low with some beer and water. No need to complicate it.

Marinate in buttermilk for a day, braise in the oven covered(lid) in stock with a lot of onion and garlic, after browning on the stove. You will slap your mama.

Sorry, I know a lot of you like it, but i put tongue in the category of organ meat and god forgive, calf fries. Gives me the willies.

I'm with you Count. My fat bro-in-law is a big cow tongue person, I just can't do it. If Red China confiscated all other parts of a cow and all we were left with was a bunch of tongues, I'd have to give up beef.
