I fried some chicken 2 weeks ago in peanut oil and strained and saved it to the originall jugs. My question is i did not refridgerate it. Would it still be good to use to fry more chicken?

As long as you didn't burn it you're good.

I might be a little embarassed to say how old some of my oil is... I keep runn'n it through a paper towel in a funnel, right back where it came from... I just add new, as I need it..
I do keep it in the fridge though.. but, a big difference between 2 weeks and 2 years...
