Wild turkey is very lean. Wrap in foil and cook on indirect heat for around an hour to an hour and fifteen minutes. IMO, they are better trophys than table fare.

I like it cut up and fried in nuggets

Every wild turkey I've ever cooked has been amazing. I prefer to cut the breast up and fry it. But I've grilled and baked it also

I cut into 1" pieces and soak in buttermilk. I then bread in flour with a bit of salt and pepper. Pan fried for only a few minutes so as not to dry out the meat.
Wheres the pics of your bird?
Been a rough season thus far as I havent bagged one myself yet. So its good to see other people having success.

Chip, what time was it when you killed him?
A little late now, but the post about cutting it into nuggets and frying it is spot on. Cut the breast meat into 1" nuggets, and soak in buttermilk. Take non-rising flour, and mix salt and "Happy Cajun" or some other type of multi-spice to taste. Dump the flour/spice mixture into a paper grocery sack, and then add the nuggets. Shake the bag vigorously until all are coated, and then put them in your choice of hot oil, heated to 250 to 300 degrees. Cook until they look done. (light brown)
Congratulations on the kill!
