I am making a quick dinner of Zatarain's Gumbo. I dumped in raw chicken. If I let the whole thing boil for a few extra minutes, will it still be okay to eat (and would I even want to eat it)

Boneless or whole pieces?

I've never used Zatarain's gumbo mix before, so I don't know how long it's supposed to cook. Boneless chicken should cook pretty quick--maybe 10 minutes depending on how big the chunks are. Whole pieces of chicken with bones I would cook for at least 30 minutes.

ETA: To check for doneness, take a piece out and cut it. If it's still pinkish in the center, throw it back in.

Just like Dorothy said...It should be fine. Just simmer it longer. That's the old school way of doing it. People now days won't tolerate the skin and bones in gumbo, so they cook it first.
