Going to be making a melon and prosciutto app. this week and was wondering what everyone thought was the best cheese to serve with it. I've heard goat cheese and fresh mozzarella are good options.

Are you wrapping the melon with the proscuitto?

When I did the prosciutto tasting at St. James Cheese company, they paired it with Parm if I remember correctly.

Let me guess, they sold Parmagianno Reggiano at 16.00/Lb adding for inflation 22. Neh.

Would like to do something a bit different than my normal parm or romano.
