why would FOX have joe buck and troy aikman interrupt their regular game week prep to do a college football game less than 48 hours before they have to do an NFC playoff game ?

My guess is that the "Superbowl Crew" that has been discussed previously is actually the production team, not the on-air talent.
They're setting up the cameras and control center as they will for the Super Bowl, and staff it as they will for the Super Bowl, but the on-air talent will be the usual Fox College Football guys.

The Cowboys will be playing a intra-squad flag football game that weekend, and Fox will send Aikman and Buck to cover it.
