Wild Rabbit recipes

Rabbit stew is all I know, any other ideas?

Put em in a mulligan or cooked down in a gravy. Par boil them, especially if they are swamp rabbits. Cotton tails are generally more tender. If you got a bunch of cotton tails you might can skip the par boil.

make a fricasse or a sauce piquant. brown the quarters and back bone down and roll with it.

I had someone bring me a dove, rabbit and squirrel jambalaya that was delicious but my favorite is just to cook them in a brown gravy or onion gravy until tender and serve with a little white rice.

Jacques-Imos makes a great stewed rabbit dish. Patois has a good rabbit dish as well.

What I find to be a great way to do rabbit differently is in a spicy red sauce. I brown off the rabbit and some smoked sausage. Cook it down until tender and serve over pasta. A little red wine wouldn't hurt.

Sauce piquant is the way to gonad serve over rice. But I really like to serve it over wide egg noodles.
