Dez Bryant or Lee Evans? or, Pick My Poison

Half of my team is on bye for Week 8. Literally. I'll be cutting ties with Ben Watson and I need a WR to start. I'm having trouble deciding between Bryant and Evans.
Considerations:
- This will largely be a one week deal. My other WRs are Roddy White, Jeremy Maclin, Hines Ward and Jabar Gaffney (who is on the chopping block). My RB/WR spot is usually occupied by a decent RB option.
- I plan on picking up both Ryan Fitzpatrick and Jon Kitna in order to fill the Tony Romo void. I plan to start Fitzpatrick.
- I'm certainly open to other WR suggestions.
So, what would you do?

Lee Evans = blind squirrel finding a nut.
I had that motherfricker in two leagues this season. He doesn't do shite (except against Jacksonville... *I* could get open against Jacksonville...) all season long.
I finally cut bait in one league, and he goes apeshit.
Bryant looked like a monster last night.
