I'm about to try pochejp and 'others' recipe for a good ole jambalaya.

I'm doing it outside, since it's so nice.
I've never done one so I hope I don't mess it up,

I'll post updates as I go....

I tried pochejp's recipe last week, and it was really good. Gonna try it again tomorrow...

Good luck!

Browned down my pork roast chunks
Lightly browned my sausage, browned my fresh chopped creole onions, green onions, and added some fresh smashed garlic.

added my rice and it's boiling now...

and for shits and giggles i stole my wife's wine cooler koozie, for my bottle of Pabst!

i'm trying to do all this and watch LSU... more to come later

Just remember to leave the lid on until it's done, then open the lid, flip it over and pit the lid back on

Don't you dare do a thread like this without the final picture of the food plated.

ok
i left the lid on for 20 minutes then rolled my rice (i didn't stir it) turned the fire off, put the lid back on and let it sit.

and holy mother of mary i burned a little bit of my rice on the bottom. that damn dutch oven is hot as hell!!!!!!

but I think i did pretty good saving it, with a dash of chicken broth and a couple quick stirs!

I had a couple of boneless chicken breast that boiled to shreds on the stove top, then used the shreds of meat for the jambalaya

over all i'd say it turned out pretty good, it did have that ever so slight burnt taste to a few bites, but over all not bad

It won't take long fr you to get good at it. Once you get your timing down on the rice, then you can play with flavors and it's all good from there

Thanks!!

That little banjo burner is worth it's weight in gold.
I use it all the time, especially camping or just here around the house out side.

I also got that dutch oven from Krazy Kajun I need to use it more often... as a matter of fact I'm doing my red beans and rice in it tonight.

What ratio of broth to rice did you use? 2:1? My rice came out a little mushy.

What seasonings did you use?

pretty much
I had boiled the chicken in a big pot on the stuff, and then just poured it over my rice in the cast iron pot, so i don't exactly how much it was...

other than the creole onions, green onions and the minced garlic, i also used a healthy dose of LeBlanc's Creole Seasoning
