Fresh Softshells

cooking tonight but don't want to fry.Any original ideas floating out there??

Pan saute them in a 50/50 mix of butter and oilve oil. Use med heat. Dredge lightly in seasoned flour, sute untill gloden on both sides(only takes a few minutes per side, dress with a squeeze of lemon and enjoy. You'll quit frying them.

I think I will broil them with some scallops salt pepper and a little smokey papricka

I don't think I have eaten them or seen them cooked any other way than fried. Hard to beat perfection.

try them on the grill basted with drawn butter and garlic.
