How long does oil keep?

Olive oil, vegetable oil, etc, and where is the best place to store them?

i strain through a paper towel, using a funnel back into a big jug. I use indefinitely and just keep adding new. keep it in a cool place, never had a problem or a bad taste.

I wouldn't try to reuse olive oil. It's got a pretty low burning point. You can buy the cheap olive oil for frying.

Save the first cold press for your sauces.

vegetable oil once opened is good for aprox four to six months.

Olive & peanut oil will keep for about 6 months in a cool, dark pantry, but up to a year in the refrigerator. It may become cloudy and thicken up in the cold, if so let it warm up to room temp so it will pour.

The neighborhood I grew up in?

Best friend's mom had three jars of re-used grease on top of the stove for months at a time. One for bacon, one for fish, one for chicken.

Ugh

Another true story about my ditzy wife.
I told ya'll about how after we got married it was time to sell her house and salvage whatever stuff in her kitchen I could use.
I got down on the floor to see what was in the very back of the lowest kitchen cabinet. I spotted a Fry Daddy so I reached and grabbed it be the handle and started to pull it out. When it tilted rancid oil came spilling out.

Me: "Why is this Fry Daddy full of oil?"
Wife: "Someone told me you could reuse oil."
Me: "When did you last fry something in this?"
Wife: "About 3 years ago."

i pulled out a bottle of canola oil from the pantry awhile back and it tasted like turpentine. Then I noticed the expiration date was like 2006 on it. :puke:

My neighbor hides his wife's christmas presents in the oven.

I strain and reuse whatever oil I fry with. I use cheesecloth but then again I fry a lot and after awhile I will pitch it and buy a new batch but the above neighbor has been reusing his since I've known him.

I don't fry in olive oil.
