I've been reading some good stuff about its health benefits, so I bought a jar at Whole Foods today. It has a light coconut flavor, not too sweet, and I'm thinking chicken or shrimp cooked in this would be pretty good.

I learned about it in a class last semester and your right it does have a low smoke point and Rex it is good for as well. Cooking with it I would say chicken more than shrimp but thats my opinion.
