you could argue it's cross country skiers.
LINK
cross country skiers have the highest VO2 max.

VO2 max (also maximal oxygen consumption, maximal oxygen uptake, peak oxygen uptake or aerobic capacity) is the maximum capacity of an individual's body to transport and utilize oxygen during incremental exercise, which reflects the physical fitness of the individual.

defining athleticism is very difficult. In fact, being a great distance athlete and being an explosive athlete are antithetical to each other because they require two different types of muscles

A match is 90 mins and the average player runs like 5 miles according to someone on the other page. That's only a mile every 18 mins.
Even in the most high scoringest game I doubt a corner or WR runs a mile during a football game, not to mention the amount of rest you get in football is crazy long compared to other sports.

Rhythmic gymnastics.
Some of those girls only weigh 50 pounds and they twirl colorful things.

I'd say tennis, than boxing.
and why tennis? it's out in the damn sun. and the concrete makes it 15 degrees hotter. No one to pass the ball to, no tying up in a leg lock for 2 minutes.
and you have to see it to the end. no tap outs.

you're allowed to retire in tennis matches. happens all the time
tennis is hard because there's no set season, so guys are getting killed physically because they're playing too many tournaments

Basketball produces the best pure athletes.
It's an unfortunate fact.
