I've got about 3lbs of fresh gator tail that a coworker gave me. What should I make with it? Planning on doing something Tuesday night.

I'd cut some into 1 inch cubes and fry them as an appitizer. Soak for an hour in buttermilk spiked with some hot sauce, roll in fish fry of seasoned corn meal and fry at 350.

You could cut it up into little pieces, tenderize it, and blacken it for a sandwich or just to eat. Blackened gator is one of my favorites.
Or you could do the same as above and fry it in flour. All of it is good stuff. Just depends on what you want.

I did skewers last time with some cumin and curry powder. They were quite legitimate. I was hoping someone would have more of a steak type recipe. All the ones I come across say cut into cubes. I was guessing that it was a tenderness issue, but I have access to a bad arse tenderizer. I was thinking maybe like you do veal cutlets (tenderized, pounded) topped with some sort of sauce.

I have a coworker who loves telling stories about shooting alligators. I'll ask him how he makes his and I'll get back to ya.
