I've used the same serrated dexter for 2 years and cleaned many snapper and other large scaled fish with it . I've also burned up 5 electric knives in that same time.
Not to mention I tend to butcher the frick out of bigger fish with electric knives.

I use three utensils depending on what I catch:
Electric: Mister Twister (blue and white one called the Piranha) - use for scaled fish (reds, bass, snapper, choupique) and for loads of trout for speed purposes
Fillet knife: Cutco - use for skin fish mostly (catfish and trout), cutting heads off flounder and perfectly trimming areas I miss with the electric knife. I also de-skin the catfish with a pair of skinning pliers before I fillet them out.
De-Scaler: Sometime I like to de-scale trout, reds and flounder. I like skin on my fish occasionally.
Surgical scissors: I use these and my Cutco fillet knife to clean gar.

If its sharp and metal I use it. Don't worry too much about brand.
Only use electric if I have a ton of fish to clean.

Blue and white saltwater twister with 7 " blades. I've used them all this one is the best. The positioning of the trigger and thow it fits your hand s something people overlook. These have that and are tough and long lasting.

I used the bubba blade previously to clean sheep's head and reds and trout.
For the reds bit wasn't bad but it is not flexible at all. It is tough and sharp and fits your hand but otherwise I did not like it.
