+1 on Saltgrass.
Capt. Raymond is one of my best friends, knew him long before he was a fishing guide. When my grandfather who taught me everything I know about fishing was aging Raymond begged me to let him help me take him fishing. We took me, my dad and my grandfather. Raymond was beyond a good friend, and I will NEVER forget what he did, what a great friend would do.
Now that he is a guide he will do the same for you and your father, give him a call, his cell is 228-332-6134, or go to www.saltgrassoutdoors.com. You won't regret it. Also end of the year can be tough for fishing but you can always find something biting in the Venice area.
Good luck and great idea to take your Dad one last time.

If you're not set on salt water, a guided white perch trip on Toledo Bend may be easier on him. If it's cold by that time, they really stack up and it can be nonstop action. Just another idea.
Or trout fishing in Arkansas. Several NICE lodges, easy fishing with lots of action, beautiful scenery. My favorite is Gaston's.

Able bodied men get done with an inshore saltwater fishing trip feeling like they just went three rounds in an MMA fight
What kinda inshore fishin you been doing? Hell most offshore trips you, don't feel like that.

Some of us finish fishing by 10:00 am. I'm thinking that's the kind of trip the OP is looking for. Not bouncing around Lake P for a sheepshead every 90 minutes.
But but but for a month out of the year, you can get some good fish.

I really appreciate everyone's comments. I will look into each suggestion.
In MJ2's defense, I didn't mean to make my dad sound like an invalid. He still mows his own lawn, plays pool, etc. he's just not as spry as he once was and the neuropathy in his feet is only going to get worse. I'm just looking to take the old man fishing one more time. I grew up fishing with him and haven't in almost twenty years. I just want to live out one more memory before it's too late. Thank you for your concern.

I appreciate your care for your father.
My dad has parkinsons and im trying to make the most of time with him. We are going elk hunting in 3 weeks and hipefully next year, pheasant hunting. Im doig everyhing i can to help him knock down his bucket lists. He has maybe 5 good years left unless some medical changes come through

This is the ticket. Pontoon boat rail to lean on big comfy seat. Do it

Out of dularge, as good as it gets. Great guy and would be a good father/son trip. Tell him Big Country sent you.
Has great accommodations if you need them.
And catches fish.

We had a great trip this weekend with Capt Charlie Thimason's Bayou Charters in Hopefale on what very well could be my last fishing trip. All the guides were great and the lodge was very nice. The only thing that sucked was fishing in the rain all day.

I have no input other than you're a good fellow for taking on such a task. Good luck
