OT Landscapers laying St Augustine Sod in Winter

Just moved s shed and now have a large 12 x 12 dirt patch in my yard. Normally I would try to wait to the summer but I have a new house and the dog is tracking in dirt nightly. With weather forecast showing mid 70s for the next two weeks what are the odds of St. Augustine sod taking root and living through the few cold spells we may have until the spring? I'm in New Orleans if that helps .

Contractors plant St Augustine all the time during winter. It'll just be dormant/brown until spring comes. (**not an expert**)

best time of year to plant, just keep it watered
