If a feller wanted to get started in long range shooting, what is a good platform(with optics) to get started with?

What you looking to spend? A 308 bolt gun with a nice scope would be a good start

Don't want to break the bank but lets say less than $2500. I'm thinking something that'll reach out to 800+ yards.

Depends on budget. My ultimate rifle build for long range would be a Surgeon Scalpel in .300 win mag with a Tangent Theta
5-25X56 scope. All together that is about $11000. If you want something more budget oriented, an ER Shaw MK VII with a vortex viper can be had for a little more than 2k and still produce great groups. It really depends on what you want to spend. Also, long range can mean many things. Do you want to shoot 800yds, 1000yds, 1500yds? That all changes what you will need/require.

.308 would be very popular and have many rounds to choose from. Also when looking for rifles there are a lot more of those out there used to get into for less money.
That being said I am biased to the 6.5 creed for long range. I have a custom 6.5 that I like and is far more accurate than I am. Kegnel should be along shortly he is very knowledgeable about long range shooting.
Also in picking a caliber need to decide how far you want to go with hand loads. You can get decent factory ammo now of days but to be really dialed in long range you will need to handload.

know anyone that goes to Palo Alto?
Go hang out one weekend when there is a competition and get a feel for what you may want...
there are many platforms people swear by and most everyone is in a camp of a certain platform.
you'll see M styles(Garands M-14's), AR's etc...

Why does .308 seem to be the go to caliber when there are flatter shooting boolits out there with the same weight?

If start out with a .308
The options are limitless. With a $2500 budget starting from scratch id re-barrel and re-stock an old 700, get a good scope, and see where that gets me.

There are many people who swear by the 6.5 creedmoor's long range capabilities. It is not unheard of of people stretching it out to 1500.

I'm no expert, but I think it's because it is very very well mannered and easy to load for.

Easily. It's the current most popular round in 1000 yard matches. Much past 1500 you would be better with a bigger pill in a bigger round. 800-1000 I shoot about once a week it will handle it easily.
Look on sniper's hide classifieds for a little while you will get a feel for what you want and what you can afford on your budget. I wouldn't suggest breaking the bank on your first gun. Make sure you like the sport before going all in.

Good advice guys. Keep it coming. My son loves shooting, hoping this could be something we could do together for years to come.

That doesn't sound remotley close to St. Tammany Parish. If it is you are welcome to join me to shoot one day.

Springfield M1A with good optics would be a great setup.
